One Fish, Two Fish

I made this recipe for dinner tonight. It’s really quick and easy to make — even a girl with preeclampsia on “bed rest” can make it. This is a meal from my childhood. It is the best kind of comfort food: hot and noodley, with meat and a little cheese. The best part about making this is when cutting the tomatoes up over the pan, the juice runs all over and it’s really messy. It’s like fingerpainting for adults. Except you can’t hang your creation on the fridge.

TOMATO HOT DISH

1 lb. ground beef
1 small onion, chopped
1 can tomato soup
1 lg. can of whole tomatoes in juice, chopped
2 cups elbow macaroni
Grated cheddar cheese

Brown the meat. Add onion and cook until softened. Add the soup and tomatoes (plus the juice). Season with salt, pepper, and sugar. Be generous with the pepper. Add the sauce to cooked macaroni and stir. Top with cheese and bake in the oven (at 350) until the cheese is melty and bubbly.
